Cauliflower contains nothing toxic to dogs. It is low in calories, high in fibre and carries useful amounts of vitamin C and K, which makes it a reasonable filler for a dog that needs to lose weight. Like broccoli, cabbage and every other brassica, it ferments in the gut and produces gas, so the practical limit is set by how much wind you and your dog can tolerate rather than by any real toxicity. Raw florets are also quite hard, which makes them a choking risk for a dog that swallows without chewing. What matters far more than the vegetable is how it was cooked: cauliflower cheese, roasted cauliflower done in oil and garlic, or anything from a Sunday roast tray is a different proposition entirely.
How much is safe?
A couple of small florets for a small dog, a small handful for a large one, occasionally. Introduce it gradually - a bowlful in one go is the classic way to spend an evening with a very windy dog.
